Chocolate chip cookies
Makes 18
200g melted butter
200g brown sugar
50g caster sugar
2 eggs
400g self-raising flour
1t vanilla extract
350g chocolate chunks
Pinch salt
In a large bowl, mix the melted butter and sugar together until combined. Crack in the eggs and vanilla and mix again.
Fold in the flour until it forms a rough dough, then add the chocolate chunks and a pinch of salt. Continue to mix until just combined.
Use your hands to pull off chunks of the dough and roll it into balls (70g per ball) then transfer to a tray and place in the freezer for at least 2 hours (do not skip this step).
Once frozen, transfer to a lined baking tray and bake at 180°C bake (or 160°C fan-forced) for 15-20 minutes or until lightly golden brown. Remove and cool on a wire rack for as long as your willpower allows.
