Chocolate chip cookies

Makes 18

  • 200g melted butter

  • 200g brown sugar

  • 50g caster sugar

  • 2 eggs

  • 400g self-raising flour

  • 1t vanilla extract

  • 350g chocolate chunks

  • Pinch salt

  1. In a large bowl, mix the melted butter and sugar together until combined. Crack in the eggs and vanilla and mix again.

  2. Fold in the flour until it forms a rough dough, then add the chocolate chunks and a pinch of salt. Continue to mix until just combined.

  3. Use your hands to pull off chunks of the dough and roll it into balls (70g per ball) then transfer to a tray and place in the freezer for at least 2 hours (do not skip this step).

  4. Once frozen, transfer to a lined baking tray and bake at 180°C bake (or 160°C fan-forced) for 15-20 minutes or until lightly golden brown. Remove and cool on a wire rack for as long as your willpower allows.
